Our Cantabrian anchovies have the seal of guarantee of the highest certified quality granted by the Basque Government. This certificate accredits both the use of the best raw materials for processing and all the traceability of our raw materials. We buy them exclusively in season in the Getaria fish market and we prepare them by hand in our facilities in Zumaia.
